I might make a spinach and cheese filling too. Then a lemon and sugar one to finish. We;ll probably be using buckwheat or splet flour for the pancakes as I don't think we have any normal flour! It will keep in a fridge for about a week. I know an even easier recipe that doesn’t need cooking:
